Heart-Healthy Red Lentil Soup: In a stock pot, melt 3T butter. Add 3 cloves minced garlic, 2 chopped onions; saute until golden. Stir in 2T tomato paste, 1/2c bulgur, 1/2c red lentils, 1t each of crushed cumin and coriander seeds, 7c chicken or vegetable stock, and salt, black pepper to taste. Simmer until lentils are soft, for about 30 mins. To serve, garnish with fresh parsley, mint, and a dash of yogurt.
