Preheat oven to 300 F degrees. Grind 4 cups raw cashew pieces into flour. In a large bowl, mix 1 tsp cinnamon, 1/2 tsp each ginger and nutmeg powder, and baking soda. Mix 4 eggs with 1/2 cup coconut sugar. Add 1/4 cup palm shortening, 1 tsp lemon juice and cashew flour to create batter. Fold in ground dates, carrots and bake for 20 mins. Top with vanilla icing.
